- Firstly wash and cut mushroom remove the seeds of capsicum and cut in square pieces.
- Take a wok or a pan and heat oil in it..stir fry chopped mushroom and capsicum one by one in it and keep aside (don't over cook the veggies).
- Finely chop onion, tomato, ginger and 1green chilli(keep other green chilli without chopped fo' garnishing' purpose.
- In the same pan heat oil, saute chopped ginger fo' 2minutes then add chopped onion, green chillies and stir fry till golden in colour..add chopped tomatoes and cook.. Add salt, red pepper powder, turmeric powder (add turmeric with tight hand otherwise colour of the veggie may darker.
- Add stir fry veggies and give a good mix to combine everything well incorporate in masala..add garam masala, chopped coriander/cilantro leaves, stir and flame off.
